The Tri-Ply body of Nigella kadhai is its specialty. Sandwiched between two sheets of stainless steel is a thick core of aluminium. Aluminium is 9 times better conductor of heat than steel. This ensures heat spreads quickly and evenly thus avoiding hotspots and burning or sticking of food. The base is made of AISI Grade 430 magnetic stainless steel which is induction-friendly.
